Panama – 2021 Janson Family Gesha Lot 533 – Natural Process

This remarkable coffee comes from the Janson family estate in the highlands of western Panama.

The green tip Gesha varietal was harvested on the 4th of February 2021 on a crescent moon cycle when the sap in the coffee tree is moving upwards to the cherries, improving the sweetness of the coffee.

Lot 533 is a Natural process and was fermented for 72 hours before being slowly sun dried for 26 days.

This is a perfect example of why the Gesha varietal grown in Panama commands such extremely high prices, and this is one you will remember for a very long time. The traditional natural processing gives this coffee a sweet and fruity flavour whilst still remaining clean and vibrant.
