This remarkable coffee comes from the Janson family estate in the highlands of western Panama. This green tip Gesha was harvested on a crescent moon cycle when the sap in the coffee tree is moving upwards to the cherries, improving the sweetness of the coffee. This coffee is a Natural process and was fermented anaerobically for 48 hours before being slowly sun dried for 26 days.

This is a perfect example of why the Gesha varietal grown in Panama commands such extremely high prices. This coffee is one you will remember for a very long time.
