Alejandra Munoz is a female coffee grower who along with her partner Jonathan Gasca owns and operates the Zarza farm, which has more than 6 hectares and is located at 1,540 meters above sea level in the municipality of Pitalito, Huila. Family values, respect for the environment, and the love that they have for their work make the Zarza farm continue to grow and position itself as a producer of high quality coffees.
This beautiful Pink Bourbon lot undergoes an experimental processing technique involving two separate periods of anaerobic fermentation, first as whole coffee cherry for 24 hours and again after depulping for a further 32 hours. Then the coffee is treated with a method called “thermal shock” to remove the mucilage, before being washed with spring water then transported to raised beds for slow and careful drying over a period of 8 days.
Tasting Notes: Elegant strawberry and orange blossom fragrance, with flavours like apricot, guava and a vibrant pink grapefruit acidity.
