$22.00
Farm: Fazenda Progresso
Airumá is named after the clear, starlit nights over Fazenda Progresso in Mucugê, Bahia, Brazil. Grown at 1,150 metres above sea level in the Chapada Diamantina region, the coffee is produced by the Borré family, whose three-generation agricultural business has developed a strong reputation for quality-focused specialty coffee. The region’s warm days and cool nights encourage slow cherry maturation, helping develop the coffee’s sweetness and complexity.
Fazenda Progresso has invested heavily in coffee processing, quality control and sustainable agriculture. Ripe cherries are colour-sorted, pulped and soaked for 12 hours before drying on raised beds in a greenhouse for 14–15 days. The coffee then receives a final stage of mechanical drying to carefully stabilize moisture levels before resting and being prepared for export.
The Borré family places strong emphasis on environmental and social responsibility. Around 45% of the estate is maintained as natural reserve, while agricultural waste is composted and beneficial microorganisms are cultivated as natural fertilisers and pest controls. The family also supports the surrounding community through education, healthcare and employment initiatives.
Tasting Notes: This floral coffee is rounded out beautifully with notes of melon, orange, milk chocolate and tea rose. Toffee sweetness and a crisp, clean finish.
